If you want a concept to work, you have to really think about it - A LOT.

All chafers should have an attractive sign so customers know what's inside. IT would be great if one could carve a beef, ham or turkey signature sandwich on the unit. It would be nice if the knife and fork were right there. A good thing would be a holder for the tongs so the customer doesn't leave them inside. A great thing would be if one could hold perfect rolls, nice, warm and soft. It would be special to be able to showcase your creative concoction in style on a granite base. And if at all possible, I would like a shelf. A nice shelf that I can put things on and an attachable sneeze guard.
A man pre-slices the beef, ham and turkey. The customers make their own sandwiches. The waitress can also serve it. It's a great sandwich, 5 oz., 31% food cost, 90 to 120 a day.
Three 4' fold-up tables. Three fold and store sneeze guards. Five chafers. One carving unit. It's a concept that works for breakfast, lunch or Saturday or Sunday brunch.
In today's world, being ready with a quality product is the answer. Use high quality rolls and croissants. Cook overnight in an altosham. The yield in beef, pork and turkey will allow you to serve a signature sandwich. Customers will line up for this. They will tell their friends. They will be back! It's that good!
